Pasta produced in a traditional way and with slow drying
The dough of our consortium, " Terre di Biccari ", born in the heart of the mountains dauni is bronze drawn and is made from durum wheat agro Biccari (FG) and pure water. The corn processed by the Consortium is produced by carefully following our specification and supplied following the conclusion of a cultivation at the beginning of the farming year contract. We use only our high-quality flour, extracted from the heart of the grain, of golden yellow color. The high content of protein gives the semolina before, and then to the pasta, a perfume and an intense flavor that is reminiscent of what good pasta than once, with a high cooking resistance. Our dough is prepared in a traditional way and with a slow drying. The use of bronze dies allows all sizes of pasta to have a rough surface, able to collect all the flavors and colors of the sauce and gives our pasta a taste and a higher quality.
